Ingredients:
1 table spoon salt
1 table spoon of white or black pepper
3 table spoon of extra virgin olive oil
1 medium chopped onion
2 cups of orange lentil washed with water
4 cans of chicken broth or beef broth
3 slices of white toast ( crusts removed)
lemon slices like 4 pieces
chopped parsley
Get a pan , put the olive oil and onion and stir for 5 minutes till the onion look golden.
Get a cooking pot put the fried onion with lentils ( the hard lentils after washing it and rinse ) with the chicken broth and leave it to boil on high heat.
When it is start boiling reduce the head to medium , you will see a foam coming up the lentils , you must remove that foam by spoon every time it appears.
You keep cooking the lentil in the pot on medium heat for about 40 minutes or 45 minutes while removing the foam at the same time
When the lentil is cooked in 40 minutes , leave it to cool up for 20 minutes and you can watch tv
In a tray cut the toast in tiny pieces and put it in a microwave till it turns to crispy toast pieces
Now get back to the lentil soup pot , dump all the things in the cooking pot in a blender till it turns to soupy smooth look
Now dump the mixture in the blender to the cooking pot and add salt and pepper and parsley and leave it to boil on high heat
When it is boiling reduce the heat to medium and cook for 10 minutes
Now you serve the soup and add lemon slices at the top and some parsley , enjoy !
